Executive Chef | Tom Carroll Tom Carroll started in Biaggi’s fi rst restaurant in Bloomington, Illinois (July 2001) as a grill cook and became an Executive Chef Partner by March of 2005 for Colorado Springs. He has worked every position in kitchens and cooked his way through high school and college. He always loved the fast pace of restaurant life and combining his business, teaching, communication and years of experience in food it seemed only logical to became an executive chef. He has won multiple awards over the years including several chef partner of the quarter. As he learned the kitchen he moved quickley from grill cook to lead chef in 3 years. After taking a Kitchen Manager position with a national restaurant group, he accepted the career opportunity to move to Colorado Springs in 2003. In a 10 year span Eric opened 15 corporate restaurants throughout the United States. Since 2013 he has found his home as Executive Chef with the long established Ritz Grill and the multiple Jose Muldoon’s locations.
